Now that school is starting back, weeknight meals just became that much more challenging. Between homework, after-school activities, and all the other obligations we have to meet, the last thing we want to have to deal with is making dinner. These are the nights when the most tried-and-true kitchen appliance of all time, the crockpot, shows up to save the day. Here are a few of our favorite time-saving, headache-preventing crockpot recipes for any time of year.

Tuscan Chicken

This Tuscan chicken recipe is so easy to throw together. You can come home to juicy chicken in a creamy, garlicky Parmesan sauce, with a little spinach and sundried tomatoes for color. The end result looks incredibly impressive for the amount of work that goes into it. Serve it over pasta or mashed potatoes, or just alongside some crusty bread.

Pork Carnitas

The secret to these pork carnitas is the final step that gets the meat crispy on the outside and leaves it tender and juicy on the inside. Once the meat is prepared, you can eat it in burritos, tacos, or quesadillas. You can also eat it atop nachos or a salad.

Pot Roast

It’s hard to beat a hearty pot roast on a chilly autumn evening. And the best part? It’s an entire meal in one pot. No side dishes needed! Browning the meat before it goes in the crockpot may seem like a lot of work, but it’s totally worth it.

Loaded Potato Soup

Another cold weather favorite, and one of the world’s best comfort foods, is loaded potato soup. This is the perfect dish to throw into the crockpot when one of your family members is slightly under the weather.

Beef Chili

It doesn’t get much easier than this recipe for beef chili. If you have a crockpot with a saute function, you won’t even have to dirty up another pan to brown the meat and onions. This is another dish that’s a complete meal all by itself. Just garnish with your favorite toppings, and you’re done!

We hope these recipes help take some of the stress out of your weeknights this fall. And we hope everyone has a wonderful start to the school year!
