Ingredients
To get started, there are a variety of ingredients you will need. Go ahead and gather them all together so you can start your prep.
2 pounds ground beef
3 medium onions, chopped
1 garlic clove, minced
3 cans (10-1/2 ounces each) condensed beef broth, undiluted.
1 can (28 ounces) diced tomatoes, undrained
3 cups water
1 cup each diced carrots and celery
1 cup fresh or frozen cut green beans
1 cup cubed peeled potatoes
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
1 teaspoon dried basil
1/2 teaspoon dried thyme
salt and pepper to taste
Directions
Get a large skillet and cook the beef and onions over medium heat until the meat is no longer pink. Next, add garlic, cook for one more minute, and drain. Transfer your concoction to a five-quart slow cooker then stir in your remaining ingredients. Cover and cook on low until the vegetables are tender – this will probably take about six to eight hours.

One cup of this soup will be approximately 163 calories. The fat will be 8 grams (3 grams of saturated fat). The one cup will also have 40 mg of cholesterol and 583 mg of sodium. There will be 9 grams of carbohydrates with 4 grams of sugars and 2 grams of fiber in the one cup of soup. Lastly, it will provide 14 grams of protein. Remember, all of these are approximate.
